Description

Brighten your table with my Spring Strawberry Spinach Salad! Fresh baby spinach, juicy strawberries, crumbled feta, and toasted almonds tossed in a sweet balsamic-honey dressing. Perfect for brunch, lunch, or a light dinner, this salad is colorful, fresh, and full of flavor.


Ingredients

  • 6 cups fresh baby spinach, washed and dried
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup sliced almonds, lightly toasted
  • 1/4 red onion, thinly sliced
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and black pepper to taste

Instructions

  1. Place spinach in a large salad bowl. Slice strawberries and red onion.
  2. Toast almonds in a dry skillet over medium heat until golden.
  3. Whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  4. Add strawberries, onion, feta, and almonds to the spinach.
  5. Pour dressing over salad and toss gently.
  6. Garnish with extra almonds or feta if desired.
