- 1 cup (225g) unsalted butter, melted
- 1 ½ cups (300g) light brown sugar, packed
- 2 large eggs, at room temperature
- 2 tsp pure vanilla extract
- 2 cups (250g) all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- 1 ½ cups (225g) fresh strawberries, diced
- Optional: ½ cup (90g) white chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
- Whisk together melted butter and brown sugar until smooth.
- Add eggs one at a time, then stir in vanilla extract.
- Sift flour, baking powder, and salt, then fold into wet ingredients.
- Gently fold in strawberries and white chocolate chips.
- Spread batter evenly in the pan.
- Bake 30–35 minutes until golden and center is set.
- Cool 15 minutes, lift from pan, cool completely, then cut into squares.
Notes
Make sure butter is cooled before adding eggs. Gently fold in strawberries to keep them intact. Don’t overbake for extra moist blondies. Store in airtight containers at room temperature, fridge, or freezer.
