Description

Soft, buttery cake bars layered with luscious strawberry filling. Perfect for family gatherings, afternoon tea, or anytime you crave a sweet, comforting treat.


Ingredients

  • 2 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 2 cups fresh strawberries, hulled and chopped
  • ¼ cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13-inch pan.
  2. Whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs and vanilla extract.
  5. Alternately add flour mixture and buttermilk until combined.
  6. Spread half the batter into the pan.
  7. Cook strawberries with sugar, cornstarch, and lemon juice until thickened; cool.
  8. Spread filling over batter, then top with remaining batter.
  9. Bake 40–45 minutes or until a toothpick comes out clean.
  10. Cool completely before slicing.

Notes

Use ripe strawberries for best flavor. Do not overmix the batter to keep bars tender. Store in an airtight container for up to 4 days or freeze for up to 3 months.
