- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- 2 cups fresh strawberries, hulled and chopped
- ¼ cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
Instructions
- Preheat oven to 350°F (175°C) and prepare a 9×13-inch pan.
- Whisk together flour, baking powder, baking soda, and salt.
- Cream butter and sugar until light and fluffy.
- Add eggs and vanilla extract.
- Alternately add flour mixture and buttermilk until combined.
- Spread half the batter into the pan.
- Cook strawberries with sugar, cornstarch, and lemon juice until thickened; cool.
- Spread filling over batter, then top with remaining batter.
- Bake 40–45 minutes or until a toothpick comes out clean.
- Cool completely before slicing.
Notes
Use ripe strawberries for best flavor. Do not overmix the batter to keep bars tender. Store in an airtight container for up to 4 days or freeze for up to 3 months.
