- 1 tablespoon cornstarch
- 2 tablespoons water
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Wash, hull, and finely chop the strawberries.
- Add strawberries, sugar, and lemon juice to a saucepan over medium heat.
- Simmer for 5–7 minutes until strawberries soften and release juices.
- In a small bowl, mix cornstarch and water until smooth.
- Pour the cornstarch mixture into the saucepan while stirring continuously.
- Cook for 2–3 minutes until the compote thickens.
- Stir in vanilla extract if using.
- Remove from heat and let cool completely before filling cupcakes.
Notes
Use ripe strawberries for maximum sweetness and flavor. Blend slightly for a smoother filling if desired. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months. Allow the filling to cool fully before adding to cupcakes to prevent melting frosting.
