Description

These Strawberry Cream Cheese Cake Bars are soft, creamy, and bursting with fresh strawberries. Perfect for any occasion, they combine a buttery cake base, sweet cream cheese layer, and juicy strawberry topping for a dessert everyone will love.

  • 1 cup (225g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2½ cups (315g) all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 16 oz (450g) cream cheese, softened
  • ½ cup (100g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups (300g) fresh strawberries, sliced
  • ¼ cup (50g) granulated sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
  2. Cream butter and sugar, then add eggs and vanilla.
  3. Mix flour, baking powder, and salt; fold into wet ingredients.
  4. Beat cream cheese, sugar, egg, and vanilla until smooth.
  5. Spread cake batter in pan, top with cream cheese mixture, and swirl gently.
  6. Toss strawberries with sugar and lemon juice, layer on top.
  7. Bake 40–45 minutes until lightly golden. Cool completely before slicing.
