- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh strawberries, chopped
- Cream Cheese Swirl: 4 oz cream cheese, 2 tbsp sugar, 1/2 tsp vanilla extract
Instructions
- Preheat oven to 375°F (190°C) and line muffin tin.
- Mix dry ingredients in a bowl.
- Whisk wet ingredients in another bowl.
- Combine wet and dry ingredients gently.
- Toss strawberries in flour and fold into batter.
- Beat cream cheese, sugar, and vanilla for swirl.
- Fill muffin liners 2/3 full, drop cream cheese on top, swirl gently.
- Bake 18–22 minutes, cool 5 minutes in pan, transfer to wire rack.
Notes
Toss strawberries in flour to prevent sinking. Use room-temperature eggs and cream cheese. Optional lemon zest brightens flavor. Store airtight at room temp 3 days; freeze up to 2 months.
