- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tbsp baking powder
- ½ tsp salt
- ½ cup unsalted butter, softened
- 1 cup milk
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups fresh strawberries, hulled and chopped
- ½ cup granulated sugar
- 1 tbsp lemon juice
- 2 cups heavy cream
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- Fresh strawberries, halved or sliced
- Optional: mint leaves
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×13-inch pan.
- Mix flour, sugar, baking powder, and salt.
- Add butter, milk, eggs, and vanilla; beat until smooth.
- Pour batter into pan and bake 30–35 mins. Cool completely.
- Prepare strawberry syrup by simmering strawberries, sugar, and lemon juice. Cool.
- Poke holes in cake and pour syrup over.
- Whip cream with powdered sugar and vanilla. Spread over cake.
- Decorate with fresh strawberries and mint.
Notes
Add a spoonful of sour cream to the batter for extra moistness. Macerate strawberries for richer flavor. Whip cream in a chilled bowl to hold peaks. Assemble just before serving for best freshness.
