Description

These Strawberry Lemon Blondies are soft, chewy, and bursting with bright citrus and sweet strawberries. Made with melted butter, brown sugar, fresh lemon, and chopped strawberries, they are a quick and delightful dessert perfect for tea time, picnics, or anytime you want a comforting treat.


Ingredients

  • 1 cup unsalted butter, melted
  • 1 1/2 cups light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • Zest of 2 lemons
  • 2 tablespoons fresh lemon juice
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped fresh strawberries
  • Optional: 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 175°C (350°F) and line a 9×13-inch pan with parchment paper.
  2. Whisk melted butter and brown sugar until smooth and glossy.
  3. Add eggs one at a time, then stir in vanilla extract, lemon zest, and lemon juice.
  4. Fold in flour, baking powder, and salt until just combined.
  5. Toss strawberries (and chocolate chips) with a teaspoon of flour and fold into batter.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 25–30 minutes until lightly golden and a toothpick comes out with a few moist crumbs.
  8. Cool completely before slicing into squares.

Notes

Use fresh, ripe strawberries for best flavor. Do not overmix to keep a chewy texture. Optional glaze or chocolate chips add extra richness. Store in an airtight container at room temperature for up to 3 days or freeze slices for 2 months.
