- 1 1/2 cups light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- Zest of 2 lemons
- 2 tablespoons fresh lemon juice
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped fresh strawberries
- Optional: 1/2 cup white chocolate chips
Instructions
- Preheat oven to 175°C (350°F) and line a 9×13-inch pan with parchment paper.
- Whisk melted butter and brown sugar until smooth and glossy.
- Add eggs one at a time, then stir in vanilla extract, lemon zest, and lemon juice.
- Fold in flour, baking powder, and salt until just combined.
- Toss strawberries (and chocolate chips) with a teaspoon of flour and fold into batter.
- Pour batter into prepared pan and smooth the top.
- Bake for 25–30 minutes until lightly golden and a toothpick comes out with a few moist crumbs.
- Cool completely before slicing into squares.
Notes
Use fresh, ripe strawberries for best flavor. Do not overmix to keep a chewy texture. Optional glaze or chocolate chips add extra richness. Store in an airtight container at room temperature for up to 3 days or freeze slices for 2 months.
