Description

These Strawberry Lemon Whoopie Pies are soft, fluffy strawberry cake sandwiches filled with bright and creamy lemon buttercream. Perfect for spring gatherings, tea parties, and sweet family moments, this easy homemade dessert delivers fresh fruit flavor in every bite.


Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup fresh strawberry puree
  • 1/4 cup whole milk
  • 3/4 cup unsalted butter (for filling)
  • 3 cups powdered sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract (for filling)
  • Pinch of salt

Instructions

  1. Preheat oven to 180°C (350°F) and line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla.
  5. Stir in strawberry puree.
  6. Alternate adding dry ingredients and milk until combined.
  7. Scoop small rounds onto prepared trays.
  8. Bake for 10-12 minutes and cool completely.
  9. Beat butter for filling until creamy.
  10. Add powdered sugar gradually.
  11. Mix in lemon zest, lemon juice, vanilla, and salt.
  12. Pipe filling onto one cake and sandwich with another.

Notes

Use fresh strawberries for the best flavor. Do not overbake the cakes to keep them soft. Store in an airtight container in the refrigerator for up to 4 days. Let them come to room temperature before serving for the best texture.
