Description

Bright, fun, and bursting with flavor, this Strawberry Lemonade Jello Poke Cake combines a soft yellow cake, strawberry lemonade jello soaked sponge, and creamy frosting for the perfect summer treat.


Ingredients

  • 1 box yellow cake mix
  • Ingredients required by cake mix
  • 1 package (3 oz) strawberry lemonade Jello
  • 1 cup boiling water
  • ½ cup cold water
  • 1 package (8 oz) cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh strawberries, sliced (optional)

Instructions

  1. Preheat oven and prepare pan.
  2. Bake cake as directed and cool slightly.
  3. Dissolve jello in boiling water, stir in cold water, and cool slightly.
  4. Poke holes all over cake with wooden spoon handle.
  5. Pour jello over cake and refrigerate 2 hours.
  6. Beat cream cheese and butter until smooth.
  7. Add powdered sugar and vanilla; spread over chilled cake.
  8. Garnish with strawberries.

Notes

Poke holes while cake is warm for best jello absorption. Chill completely before frosting. Store refrigerated up to 4 days.
