Description

A buttery and flaky Strawberry Puff Pastry Tart made with fresh strawberries, vanilla, and a golden baked puff pastry base. Finished with a glossy apricot glaze, this easy dessert is perfect for brunch, tea time, or special occasions.


Ingredients

  • 1 sheet puff pastry
  • 2 cups fresh strawberries (sliced)
  • 3 tbsp sugar
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 1 egg (for egg wash)
  • 2 tbsp apricot jam + 1 tbsp water

Instructions

  1. Preheat oven to 200°C (392°F).
  2. Place puff pastry on baking tray.
  3. Score edges and prick center.
  4. Brush edges with egg wash.
  5. Mix strawberries with sugar, vanilla, and cornstarch.
  6. Spread over pastry center.
  7. Bake 20–25 minutes until golden.
  8. Brush with apricot glaze.

Notes

Keep pastry cold before baking. Avoid overloading strawberries. Best served fresh with ice cream or powdered sugar. Store in fridge for up to 2 days.
