- 3 tbsp sugar
- 1 tsp vanilla extract
- 1 tbsp cornstarch
- 1 egg (for egg wash)
- 2 tbsp apricot jam + 1 tbsp water
Instructions
- Preheat oven to 200°C (392°F).
- Place puff pastry on baking tray.
- Score edges and prick center.
- Brush edges with egg wash.
- Mix strawberries with sugar, vanilla, and cornstarch.
- Spread over pastry center.
- Bake 20–25 minutes until golden.
- Brush with apricot glaze.
Notes
Keep pastry cold before baking. Avoid overloading strawberries. Best served fresh with ice cream or powdered sugar. Store in fridge for up to 2 days.
