- 200g digestive biscuits, crushed
- 100g unsalted butter, melted
- 2 tbsp granulated sugar
- 400g cream cheese, softened
- 150g granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 200ml sour cream
- 250g fresh strawberries, hulled
- 2 tbsp sugar
- 1 tsp lemon juice
Instructions
- Preheat oven to 175°C (350°F) and line a 20x20cm pan with parchment paper.
- Mix crushed biscuits, melted butter, and sugar; press into pan and bake 10 mins. Cool.
- Beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream.
- Pour over cooled crust and bake 25–30 mins. Cool completely.
- Blend strawberries, sugar, and lemon juice into purée. Spread over cooled cheesecake.
- Chill 2 hrs, cut into squares, and serve.

- Use room temperature cream cheese for smooth filling.
- Chill bars fully before cutting for neat squares.
- Substitute graham crackers for digestive biscuits if preferred.
