Description

These Strawberry Purée Cheesecake Bars are a sweet, creamy, and fruity dessert with a buttery crust, silky cheesecake filling, and fresh strawberry purée on top. Perfect for family gatherings or cozy afternoons, this recipe is simple to make yet impressively delicious.


Ingredients

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 2 tbsp granulated sugar
  • 400g cream cheese, softened
  • 150g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 200ml sour cream
  • 250g fresh strawberries, hulled
  • 2 tbsp sugar
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 175°C (350°F) and line a 20x20cm pan with parchment paper.
  2. Mix crushed biscuits, melted butter, and sugar; press into pan and bake 10 mins. Cool.
  3. Beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream.
  4. Pour over cooled crust and bake 25–30 mins. Cool completely.
  5. Blend strawberries, sugar, and lemon juice into purée. Spread over cooled cheesecake.
  6. Chill 2 hrs, cut into squares, and serve.

Notes

  • Use room temperature cream cheese for smooth filling.
  • Chill bars fully before cutting for neat squares.
  • Substitute graham crackers for digestive biscuits if preferred.
