Ingredients

Scale
  • 500g fresh strawberries, hulled and chopped
  • 100g granulated sugar
  • 1 tsp pure vanilla extract
  • 1 tbsp fresh lemon juice
  • 2 tbsp water
  • Optional: 1 tsp cornstarch + 1 tbsp water

Instructions

  1. Combine strawberries, sugar, lemon juice, and water in a saucepan.
  2. Bring to a gentle boil over medium heat, stirring occasionally.
  3. Reduce heat and simmer 10–15 mins until strawberries break down.
  4. Remove from heat and stir in vanilla extract.
  5. Blend with an immersion blender if desired, or leave chunky.
  6. Optional: Stir in cornstarch slurry for thicker consistency, cook 1–2 mins.
  7. Cool slightly before serving or storing.
