- 100g granulated sugar
- 1 tsp pure vanilla extract
- 1 tbsp fresh lemon juice
- 2 tbsp water
- Optional: 1 tsp cornstarch + 1 tbsp water
Instructions
- Combine strawberries, sugar, lemon juice, and water in a saucepan.
- Bring to a gentle boil over medium heat, stirring occasionally.
- Reduce heat and simmer 10–15 mins until strawberries break down.
- Remove from heat and stir in vanilla extract.
- Blend with an immersion blender if desired, or leave chunky.
- Optional: Stir in cornstarch slurry for thicker consistency, cook 1–2 mins.
- Cool slightly before serving or storing.
Notes
Use ripe strawberries for maximum flavor. Adjust sugar to taste. Store in the fridge for up to 1 week or freeze for 3 months. Perfect for pancakes, ice cream, yogurt, or cakes.
