Ingredients

  • 6 cups baby spinach, washed and dried
  • 1 pint strawberries, hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup sliced almonds, toasted
  • 1/4 small red onion, thinly sliced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 1/3 cup extra virgin olive oil
  • Salt and black pepper, to taste

Instructions

  1. Wash and dry spinach; hull and slice strawberries.
  2. Toast almonds in a small pan until golden.
  3. Whisk together balsamic vinegar, honey, Dijon, olive oil, salt, and pepper for dressing.
  4. Toss spinach, strawberries, red onion, and feta in a large bowl.
  5. Add almonds and dressing just before serving; toss gently.
  6. Serve immediately for best flavor.

Notes

Toast almonds for maximum flavor. Make dressing ahead; store separately. Add nuts and dressing only before serving to prevent soggy salad.
