Description

This Strawberry Spinach Salad with Poppy Seed Dressing is a fresh, vibrant dish made with juicy strawberries, crisp spinach, creamy feta, and crunchy nuts, all tossed in a sweet and tangy homemade dressing.


Ingredients

  • 6 cups fresh baby spinach
  • 2 cups strawberries, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/3 cup almonds, toasted
  • 1/3 cup mayonnaise
  • 2 tablespoons milk
  • 2 tablespoons sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon poppy seeds
  • 1 teaspoon Dijon mustard

Instructions

  1. Whisk together mayonnaise, milk, sugar, vinegar, mustard, and poppy seeds.
  2. Refrigerate dressing for best flavor.
  3. Place spinach in a large bowl.
  4. Add sliced strawberries and red onion.
  5. Sprinkle feta cheese over the salad.
  6. Toast almonds and let cool.
  7. Add almonds to the salad.
  8. Drizzle dressing just before serving.
  9. Toss gently and serve immediately.

Notes
