- 2 cups fresh strawberries, hulled and sliced
- ½ cup crumbled feta cheese
- ½ cup sliced almonds, toasted
- ¼ small red onion, thinly sliced
- 1 cup cherry tomatoes, halved (optional)
- ½ cup mayonnaise
- ¼ cup Greek yogurt
- 3 tablespoons honey
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon poppy seeds
- Salt and black pepper, to taste
Instructions
- Wash and dry the spinach, placing it in a large salad bowl.
- Hull and slice the strawberries evenly.
- Toast almonds in a dry skillet over medium heat until golden, then cool.
- Whisk together mayonnaise, Greek yogurt, honey, apple cider vinegar, Dijon mustard, poppy seeds, salt, and pepper.
- Combine strawberries, red onion, cherry tomatoes, feta, and almonds with spinach.
- Pour dressing over the salad and toss gently to coat.
