Ingredients

  • 6 cups fresh baby spinach, washed and dried
  • 2 cups fresh strawberries, hulled and sliced
  • ½ cup crumbled feta cheese
  • ½ cup sliced almonds, toasted
  • ¼ small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved (optional)
  • ½ cup mayonnaise
  • ¼ cup Greek yogurt
  • 3 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon poppy seeds
  • Salt and black pepper, to taste

Instructions

  1. Wash and dry the spinach, placing it in a large salad bowl.
  2. Hull and slice the strawberries evenly.
  3. Toast almonds in a dry skillet over medium heat until golden, then cool.
  4. Whisk together mayonnaise, Greek yogurt, honey, apple cider vinegar, Dijon mustard, poppy seeds, salt, and pepper.
  5. Combine strawberries, red onion, cherry tomatoes, feta, and almonds with spinach.
  6. Pour dressing over the salad and toss gently to coat.
  7. Serve immediately for best flavor and texture.

Notes
