- 250g (2 cups) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 170g (3/4 cup) unsalted butter, softened
- 150g (3/4 cup) granulated sugar
- 1 large egg, at room temperature
- 1 tsp vanilla extract
- 2 tbsp strawberry puree (fresh or thawed frozen strawberries, blended)
- 50g (1/4 cup) powdered sugar, for rolling
Instructions
- Preheat oven to 180°C (350°F) and line baking sheets with parchment paper.
- Whisk flour, baking powder, baking soda, and salt in a medium bowl.
- Beat butter and sugar until light and fluffy.
- Add egg, vanilla, and strawberry puree; mix until combined.
- Gradually add dry ingredients; mix until just combined.
- Scoop dough into balls, roll in powdered sugar, place 2 inches apart.
- Bake 10–12 minutes until edges are lightly golden.
- Cool 5 minutes on baking sheet, then transfer to wire rack.
Notes
Use ripe strawberries for best flavor and natural pink color. Dough can be frozen before baking; bake from frozen, adding 2 extra minutes. Cookies keep in an airtight container for up to 3 days or in fridge for 5 days.
