Description

Soft, buttery, and lightly pink from real strawberries, these Strawberry Sugar Cookies are perfect for spring gatherings. Easy to bake, full of flavor, and a joy to share with family and friends.


Ingredients

  • 250g (2 cups) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 170g (3/4 cup) unsalted butter, softened
  • 150g (3/4 cup) granulated sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • 2 tbsp strawberry puree (fresh or thawed frozen strawberries, blended)
  • 50g (1/4 cup) powdered sugar, for rolling

Instructions

  1. Preheat oven to 180°C (350°F) and line baking sheets with parchment paper.
  2. Whisk flour, baking powder, baking soda, and salt in a medium bowl.
  3. Beat butter and sugar until light and fluffy.
  4. Add egg, vanilla, and strawberry puree; mix until combined.
  5. Gradually add dry ingredients; mix until just combined.
  6. Scoop dough into balls, roll in powdered sugar, place 2 inches apart.
  7. Bake 10–12 minutes until edges are lightly golden.
  8. Cool 5 minutes on baking sheet, then transfer to wire rack.

Notes

Use ripe strawberries for best flavor and natural pink color. Dough can be frozen before baking; bake from frozen, adding 2 extra minutes. Cookies keep in an airtight container for up to 3 days or in fridge for 5 days.
