Description

My Strawberry Swirl Cheesecake combines creamy, rich cheesecake with vibrant strawberry swirls. Perfect for family gatherings or cozy nights, this easy recipe is a comforting treat that delights the eyes and taste buds alike.


Ingredients

Scale
  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 600g cream cheese, room temperature
  • 200g granulated sugar
  • 3 large eggs
  • 200ml sour cream
  • 1 tsp vanilla extract
  • 250g fresh strawberries
  • 50g granulated sugar
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 160°C (320°F). Grease a 23cm springform pan and line with parchment.
  2. Mix crushed biscuits and butter. Press into pan to form crust. Chill.
  3. Beat cream cheese until smooth, add sugar gradually.
  4. Add eggs one at a time, stir in sour cream and vanilla.
  5. Pour filling over crust.
  6. Blend strawberries with sugar and lemon juice; drop spoonfuls over filling.
  7. Swirl with a skewer or knife.
  8. Bake 50–60 mins until center is just set.
  9. Cool in oven 30 mins, then chill 4+ hours.

Notes

Use room-temperature cream cheese for smooth texture. Strain strawberry purée for seed-free swirls. Can make a day ahead; flavors improve overnight.
