- 1 egg yolk
- 2–3 tbsp cold water
- 1/2 cup butter (softened)
- 1/2 cup sugar
- 1 cup almond flour
- 2 eggs
- 1 tsp vanilla extract
- 2 cups fresh strawberries
- 1 tbsp apricot jam
Instructions
- Make tart dough and chill for 30 minutes.
- Roll dough into tart pan and blind bake.
- Beat butter and sugar for almond cream.
- Add eggs, vanilla, almond flour, and mix well.
- Fill tart shell with almond cream.
- Bake until golden and set.
- Cool completely before topping.
- Arrange strawberries and brush with apricot glaze.
Notes
Chill the tart before slicing for clean edges. Use fresh strawberries for best flavor. You can swap berries depending on season.
