Description

Elegant Strawberry Tart with Almond Cream featuring a buttery crust, rich almond frangipane filling, and fresh strawberries topped with apricot glaze. A classic French-inspired dessert perfect for any occasion.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter (cold)
  • 1/4 cup powdered sugar
  • 1 egg yolk
  • 23 tbsp cold water
  • 1/2 cup butter (softened)
  • 1/2 cup sugar
  • 1 cup almond flour
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries
  • 1 tbsp apricot jam

Instructions

  1. Make tart dough and chill for 30 minutes.
  2. Roll dough into tart pan and blind bake.
  3. Beat butter and sugar for almond cream.
  4. Add eggs, vanilla, almond flour, and mix well.
  5. Fill tart shell with almond cream.
  6. Bake until golden and set.
  7. Cool completely before topping.
  8. Arrange strawberries and brush with apricot glaze.

Notes

Chill the tart before slicing for clean edges. Use fresh strawberries for best flavor. You can swap berries depending on season.
