- 1 1/4 cups flour
- 1/2 cup butter
- 1/4 cup powdered sugar
- 1 egg yolk
- 2–3 tbsp cold water
- Pinch of salt
- 1 cup mascarpone
- 1/2 cup heavy cream
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups strawberries
- 2 tbsp strawberry jam
Instructions
- Mix flour, sugar, and salt.
- Add butter and mix until crumbly.
- Add egg yolk and water.
- Chill dough for 30 minutes.
- Bake crust until golden.
- Whip mascarpone, cream, sugar, and vanilla.
- Spread cream into cooled crust.
- Top with strawberries.
- Brush with glaze and chill.
Notes
Chill dough before baking for a crisp crust. Use fresh strawberries only. Don’t overwhip mascarpone. Assemble close to serving time for best texture.
