Ingredients

  • 200g dark chocolate (70% cocoa)
  • 175g unsalted butter
  • 250g caster sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 100g plain flour
  • 30g cocoa powder
  • ½ tsp salt
  • 100g chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 180°C (350°F) and line a 20x20cm tray with parchment.
  2. Melt chocolate and butter together until smooth. Cool slightly.
  3. Whisk eggs and sugar until pale, add vanilla.
  4. Fold in chocolate-butter mixture gently.
  5. Sift and fold in flour, cocoa powder, and salt. Do not overmix.
  6. Fold in nuts if using.
  7. Pour into tray and smooth top.
  8. Bake 25–30 minutes; check with toothpick for desired gooeyness.
  9. Cool 10–15 minutes in tray, then remove and cool completely before cutting.

Notes

Use good-quality chocolate for best flavor. Slightly underbake for gooey centers. Store airtight at room temperature up to 4 days or freeze up to 3 months.
