- 500g fresh strawberries, hulled and halved
- 100g granulated sugar
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest (optional)
- 1 tsp cornstarch (optional)
- 2 tbsp water (for cornstarch)
Instructions
- Wash, hull, and halve the strawberries.
- Add strawberries to a saucepan with sugar, lemon juice, and zest.
- Simmer over medium heat for 10–15 minutes, stirring occasionally and mashing some berries.
- If using, dissolve cornstarch in water and stir into the compote. Cook 2–3 minutes until thick.
- Remove from heat and let cool to room temperature before using.
Notes
Adjust sugar based on strawberry sweetness. Lemon juice brightens flavor naturally. Cornstarch gives extra thickness for cakes but is optional. Store in fridge for 5 days or freeze for 2 months.
