Ingredients

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 2 tablespoons sugar
  • 600g cream cheese, room temperature
  • 150g caster sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs, room temperature
  • 200ml sour cream or heavy cream

Instructions

  1. Preheat oven to 160°C (320°F). Line a 23cm pan.
  2. Mix crust ingredients and press into pan. Chill.
  3. Beat cream cheese, sugar, and vanilla.
  4. Add eggs one at a time, fold in cream.
  5. Pour onto crust, smooth top.
  6. Bake 50–60 min.
  7. Cool in oven 1 hour, then refrigerate 4+ hours.
