- 1 whole chicken (3–4 lbs)
- 2 large carrots, sliced
- 2 celery stalks, sliced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- 8 cups chicken broth
- 2 cups egg noodles
- 2 tbsp olive oil or butter
- Fresh parsley for garnish (optional)
Instructions
- Rinse and pat dry the chicken.
- Sauté onion, carrots, celery, and garlic in olive oil for 5–7 mins.
- Add chicken, broth, bay leaves, thyme, parsley, salt, and pepper. Simmer 1–1.5 hrs.
- Remove chicken, shred meat, discard bones and skin.
- Cook noodles in broth for 8–10 mins.
- Add shredded chicken back into the pot. Adjust seasoning.
- Garnish with parsley and serve.
Notes
Simmer chicken slowly for a richer broth. Add noodles last to prevent mushiness. Optional: roast chicken for extra flavor. Store refrigerated up to 3 days or freeze for 2 months.
