- 200g unsalted butter
- 250g dark chocolate, chopped
- 250g caster sugar
- 3 large eggs
- 2 tsp vanilla extract
- 100g plain flour
- 30g cocoa powder, sifted
- ½ tsp salt
- Optional: 100g chocolate chunks or nuts
Instructions
- Preheat oven to 180°C (160°C fan) and line a 20x20cm tin with parchment paper.
- Melt butter and chocolate together over simmering water; cool slightly.
- Whisk eggs, sugar, and vanilla until pale and frothy.
- Fold chocolate mixture into eggs gently.
- Sift flour, cocoa, and salt, then fold into batter carefully.
- Fold in chocolate chunks or nuts if using.
- Pour into tin, smooth top, and bake 25–30 mins.
- Cool for 15 mins before lifting out and slicing.
Notes
Use room temperature eggs for a soft texture. Don’t overmix after adding flour to keep fudgy centers. Store in an airtight container up to 4 days; freeze up to 2 months. Optional chocolate chunks or nuts add extra texture.
