- 150g caster sugar
- 100g light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 2 lemons
- 300g plain flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 200g white chocolate, chopped
- 2 tbsp fresh lemon juice
Instructions
- Preheat oven to 180°C (160°C fan) and line a baking tray with parchment paper.
- Cream butter and sugars until fluffy.
- Beat in eggs, vanilla, and lemon juice until smooth.
- Fold in lemon zest.
- Sift and fold in dry ingredients.
- Fold in white chocolate chunks.
- Scoop dough onto tray, leaving space between cookies.
- Bake 10–12 minutes until edges are golden.
- Cool 5 minutes on tray, then transfer to a wire rack.
Notes
Use fresh lemon zest for the best flavor. Softened butter ensures chewy cookies. Store in an airtight container up to 5 days. Freeze dough for later baking, adding 1–2 minutes to cook time.
