- 200g white chocolate, chopped
- 150g unsalted butter, cubed
- 150g caster sugar
- 3 large eggs
- 1 tsp vanilla extract
- 125g plain flour
- 2 tbsp matcha green tea powder
- 1/4 tsp salt
- Optional: 50g white chocolate chunks
Instructions
- Preheat oven to 180°C (160°C fan) and line a 20x20cm tin with parchment.
- Melt white chocolate and butter together gently over simmering water.
- Whisk in sugar until glossy, then add eggs one at a time and stir in vanilla.
- Sift flour, matcha, and salt together and fold into the wet mixture.
- Fold in optional white chocolate chunks, pour batter into the tin, and spread evenly.
- Bake for 20–25 minutes until a toothpick comes out with moist crumbs.
- Cool completely, then cut into squares and serve.
Notes
Use high-quality white chocolate for best flavor. Sifting matcha prevents clumps. Store in airtight container; freezes well.
