1 lb Fettuccine pasta
1.5 lbs Boneless, skinless chicken breast, sliced into thin strips
6 cloves Garlic, freshly minced
2 cups Heavy cream, room temperature
1.5 cups Parmesan cheese, freshly grated
3 tbsp Unsalted European-style butter
2 tbsp Fresh parsley, finely chopped
Kosher salt to taste
Black pepper to taste
Garlic powder to taste


Instructions

Bring a large pot of salted water to a boil and cook fettuccine according to package directions until al dente.
Season chicken strips generously with kosher salt, black pepper, and garlic powder.
Heat 1.5 tbsp butter in a large skillet over medium-high heat.
Brown the chicken strips on both sides until fully cooked and golden, about 6 minutes, then remove and set aside.
In the same skillet, melt the remaining butter.
Sauté the minced garlic for 60 seconds until fragrant.
Pour in the heavy cream and bring to a gentle simmer.
Whisk in the parmesan cheese until melted and smooth.
Return the chicken to the pan and toss in the cooked pasta to coat.
Top with fresh parsley before serving.

Notes

Use room temperature heavy cream to prevent the sauce from curdling. Avoid pre-shredded cheese as it contains anti-caking agents that hinder proper melting. If the sauce becomes too thick, add a splash of the pasta cooking water.
