- 200g almond flour
- 100g granulated sugar
- 1 large egg white
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 120g pine nuts
- Pinch of salt
- Zest of 1 lemon
Instructions
- Preheat oven to 170°C (340°F) and line a baking tray.
- Mix almond flour, sugar, salt, and lemon zest.
- Add egg white and extracts, mix into dough.
- Let dough rest for 10 minutes.
- Roll into small balls.
- Coat each ball with pine nuts.
- Place on tray and flatten slightly.
- Bake for 15–18 minutes until golden.
- Cool completely before serving.
Notes
Toast pine nuts before using for extra flavor. Store cookies in an airtight container for up to 5 days. Dough can be refrigerated for 24 hours before baking.
