Description

These Almond Pine Nut Cookies are soft, buttery, and delicately sweet with a rich nutty flavor. Perfect for tea time or gifting, they combine almond flour with crunchy pine nuts for an elegant homemade treat.


Ingredients

Scale
  • 200g almond flour
  • 100g granulated sugar
  • 1 large egg white
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 120g pine nuts
  • Pinch of salt
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 170°C (340°F) and line a baking tray.
  2. Mix almond flour, sugar, salt, and lemon zest.
  3. Add egg white and extracts, mix into dough.
  4. Let dough rest for 10 minutes.
  5. Roll into small balls.
  6. Coat each ball with pine nuts.
  7. Place on tray and flatten slightly.
  8. Bake for 15–18 minutes until golden.
  9. Cool completely before serving.

Notes

Toast pine nuts before using for extra flavor. Store cookies in an airtight container for up to 5 days. Dough can be refrigerated for 24 hours before baking.
