Ingredients
2 cups Apple Cider (reduced to 1/2 cup)
2.5 cups All-Purpose Flour
1 tsp Baking Powder
1.5 tsp Ground Cinnamon
1/2 tsp Ground Ginger
1/2 tsp Salt
1 cup Unsalted Butter, softened (divided)
1 cup Brown Sugar
2 large Eggs
1 tsp Vanilla Extract
8 oz Cream Cheese, room temperature
1.5 cups Powdered Sugar
Instructions
Simmer apple cider in a saucepan over medium heat until reduced to 1/2 cup, then cool completely.
Preheat oven to 375 degrees Fahrenheit and line baking sheets with parchment.
Whisk flour, baking powder, salt, cinnamon, and ginger in a medium bowl.
Cream 1/2 cup butter and brown sugar until fluffy.
Beat in eggs and vanilla extract until well emulsified.
Gradually alternate adding dry ingredients and the cooled apple cider reduction to the butter mixture, mixing until just combined.
Scoop rounded tablespoons of batter onto sheets and bake for 10-12 minutes until set.
Beat remaining butter with cream cheese and powdered sugar until smooth for the filling.
Once cookies are cooled, pipe or spread filling onto half the cookies and top with remaining halves.
Notes
Ensure the apple cider is fully cooled before adding to the batter to prevent the butter from melting. Store in the refrigerator due to the cream cheese filling.
