Ingredients

2 cups chickpeas, canned, rinsed and drained
1/2 cup high-quality hulled tahini
1/4 cup freshly squeezed lemon juice
2 cloves garlic, minced
2 tbsp extra virgin olive oil
1/2 tsp ground cumin
1/2 tsp salt
1 tbsp ice water (as needed)


Instructions

Rinse the chickpeas thoroughly under cold water to remove excess sodium.
Peel the chickpeas by rubbing them gently between two clean kitchen towels to remove the tough outer skins.
Combine the tahini and lemon juice in a food processor and process for 60 seconds until fluffy and pale.
Add the garlic, salt, and cumin to the processor and pulse until fully incorporated.
Add the chickpeas gradually while the processor runs on low speed.
Drizzle one tablespoon of ice water into the processor while blending to adjust the consistency to your preference.
Transfer to a serving bowl and garnish with a drizzle of extra virgin olive oil.

Notes

Removing the chickpea skins is the secret to achieving a velvety, professional texture. If the mixture is too thick, add additional ice water one teaspoon at a time. Store in an airtight container in the refrigerator for up to 3 days.
