1 pound rotini or farfalle pasta
2 cups cooked rotisserie chicken, shredded or cubed
3 large ripe avocados
1/2 cup plain unsweetened Greek yogurt
3 tablespoons fresh lemon juice
1/4 cup fresh cilantro, chopped
1/4 cup red onion, finely diced
Salt and black pepper to taste


Instructions

Boil a large pot of salted water and cook the pasta according to package directions until al dente.
Drain the pasta thoroughly and rinse with cold water to stop the cooking process.
In a medium bowl, whisk together the Greek yogurt, lemon juice, salt, and pepper until smooth.
Mash one of the avocados into the yogurt mixture to create a vibrant green, creamy base dressing.
In a large serving bowl, combine the cooled pasta, shredded chicken, diced red onion, and chopped cilantro.
Dice the remaining two avocados and gently fold them into the pasta salad along with the prepared avocado-yogurt dressing.

Notes

Substitute fresh parsley for cilantro if preferred. The lemon juice is essential to prevent the avocado from browning. This salad can be stored in an airtight container in the refrigerator for up to 2 days.
