Ingredients
16 oz Rotini Pasta
2 lbs Chicken Breast
1 cup Barbecue Sauce (molasses-based hickory flavor)
1/2 cup Ranch Dressing
1/2 cup Red Onion, finely diced
1 cup Sweet Corn
1 large Bell Pepper, diced
Instructions
Boil a large pot of salted water and cook the rotini until al dente.
Drain pasta and rinse with cool water to stop the cooking process.
Grill chicken breasts over medium heat until reaching an internal temperature of 165°F.
Dice the grilled chicken into uniform bite-sized cubes.
Whisk the barbecue sauce and ranch dressing together in a small bowl until smooth.
Combine the cooled pasta, cubed chicken, corn, peppers, and onions in a large mixing bowl.
Pour the dressing mixture over the salad and toss well until evenly coated.
Notes
Substitute rotini with penne or fusilli if desired. Using fresh or frozen corn both work well. Store in an airtight container in the refrigerator for up to 3-4 days.
