Ingredients
2 lbs boneless skinless chicken thighs, cut into 1-inch cubes
1/4 cup extra virgin olive oil
3 tbsp fresh lemon juice
4 garlic cloves, minced
1 tsp dried oregano
Kosher salt to taste
Black pepper to taste
Instructions
Place cubed chicken in a large bowl.
In a separate small container, whisk olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
Pour marinade over chicken, toss well, and refrigerate for at least 1 hour.
Soak wooden skewers in water for 30 minutes if using them.
Thread chicken pieces onto skewers, ensuring they aren’t too tightly compressed.
Preheat grill or grill pan to medium-high heat and brush grates with oil.
Cook skewers for approximately 12 minutes, turning occasionally, until the internal temperature reaches 165°F.
Remove from heat once distinct grill marks appear.
Let the skewers rest for 5 minutes before serving to redistribute juices.
Notes
Always soak wooden skewers in water for thirty minutes to prevent burning during the grilling phase. Using chicken thighs provides a more forgiving texture compared to breasts, keeping the meat succulent.
