Ingredients
1 can (15 oz) chickpeas, rinsed and preferably peeled
1/2 cup high-quality hulled tahini
1/4 cup freshly squeezed lemon juice
1 clove garlic, minced
2 tablespoons extra virgin olive oil
1/2 teaspoon ground cumin
2–3 tablespoons ice water
Salt to taste
Instructions
Place tahini and fresh lemon juice in a food processor.
Process for one minute until the mixture is pale, light, and creamy.
Add minced garlic, cumin, and salt to the processor and blend for thirty seconds.
Add the rinsed chickpeas to the mixture and process until the beans start to break down.

Notes
