Description

Indulge in this restaurant-quality Broccoli Chicken Alfredo. This comforting Italian-American pasta dish features succulent, pan-seared chicken breast and vibrant, crisp-tender broccoli florets tossed in a velvety, homemade Parmesan cream sauce. By using high-quality dairy and authentic emulsification techniques, you can achieve a perfectly smooth, rich finish every time. It is the ideal foolproof meal for busy weeknights that provides a complete, delicious balance of protein and greens in one satisfying, creamy bowl.

Ingredients

Scale

1 Lbs Chicken Breast, sliced into bite-sized strips
12 Oz Fettuccine
2 Cups Fresh Broccoli florets
1.5 Cups Heavy Cream, room temperature
1.5 Cups Parmesan Cheese, freshly grated
3 Tbsp Unsalted European style butter
3 Cloves Garlic, minced finely
Salt and Black Pepper to taste

Instructions

Boil a large pot of salted water and add the fettuccine, cooking until slightly firm.
Add the broccoli florets to the pasta water during the final three minutes of boiling.
Drain the pasta and broccoli together while reserving one half cup of the starchy cooking water.
Sauté the seasoned chicken strips in a large skillet with two tablespoons of butter until golden brown, then remove from the pan.
In the same skillet, melt the remaining butter and sauté the minced garlic until fragrant.
Pour in the heavy cream and bring to a gentle simmer.
Whisk in the freshly grated Parmesan cheese until melted and smooth.
Return the chicken, pasta, and broccoli to the skillet, tossing to coat in the sauce.
Add a splash of the reserved pasta water if needed to adjust consistency and season with salt and pepper.

Notes

Ensure the cream is at room temperature before adding to the pan to prevent curdling. Freshly grated Parmesan is crucial as pre-shredded cheese contains anti-caking agents that prevent a smooth melt. Reserve pasta water to emulsify the sauce to your desired thickness.
