Description

This classic Brown Gravy Meatloaf features tender, seasoned ground beef baked to perfection and smothered in a rich, velvety beef-based sauce. By avoiding heavy fillers and using a carefully crafted roux, this recipe achieves a moist, fluffy texture that pairs perfectly with the deep umami notes of the savory gravy. It is a hearty, approachable comfort food centerpiece that guarantees consistently delicious results for any family dinner.

Ingredients

Scale

2 lbs Ground Beef (80/20)
1 medium Onion, finely diced
2 cups Beef Broth (low sodium)
2 tbsp Worcestershire sauce
1 cup Breadcrumbs
1 large Egg
2 tbsp Butter
2 tbsp All-purpose flour

Instructions

Preheat your oven to 375 degrees Fahrenheit.
Combine the ground beef, diced onion, breadcrumbs, egg, and half the Worcestershire sauce in a large mixing bowl.
Mix the ingredients gently until just combined to avoid overworking the meat.
Form the mixture into a loaf shape on a rimmed baking sheet lined with parchment paper.
Bake the meatloaf for 50 to 60 minutes or until the internal temperature reaches 160 degrees Fahrenheit.
Melt the butter in a saucepan over medium heat.
Whisk in the flour and cook for two minutes to create a golden roux.
Pour the beef broth into the saucepan gradually while whisking constantly to prevent lumps.
Stir in the remaining Worcestershire sauce and simmer until the gravy thickens to your desired consistency.

Notes

Ensure you do not overmix the ground beef, as this leads to a dense meatloaf. For an extra rich flavor, you can sauté the diced onions in a little oil before adding them to the meat mixture. Leftovers should be stored in an airtight container and can be refrigerated for up to 3 days.
