Description
This classic Brown Sugar Meatloaf is the ultimate comfort food, featuring a perfectly moist and savory interior topped with a sticky, caramelized brown sugar and ketchup glaze. By using an 80/20 ground beef blend and panko breadcrumbs, this recipe ensures a tender texture that is never dry. It is a family-favorite dinner that brings heartwarming flavors to your table with minimal effort.
Ingredients
2 lbs ground beef (80/20 lean-to-fat ratio)
1 cup panko breadcrumbs
1 medium onion, finely diced
2 large eggs
1 cup tomato ketchup, divided
1/2 cup packed brown sugar
2 tbsp Worcestershire sauce (non-anchovy/halal)
Instructions
Preheat your oven to 375 degrees Fahrenheit.
Line a rimmed baking sheet with parchment paper.
In a large bowl, combine ground beef, breadcrumbs, eggs, 1/2 cup of ketchup, Worcestershire sauce, and diced onion.
Mix the ingredients gently by hand, taking care not to overwork the meat.
Form the meat mixture into a uniform loaf on the prepared baking sheet.
Whisk the remaining 1/2 cup of ketchup and 1/2 cup of brown sugar together in a small bowl until smooth.
Brush two-thirds of the glaze over the loaf.
Bake for 60 minutes, brushing with the remaining glaze halfway through the baking process to ensure a deep caramelization.
Notes
Leftovers store beautifully in an airtight container for up to 3 days. This meatloaf makes excellent sandwiches the next day. Ensure the onion is finely diced so it softens completely during the baking time.
