Description

Experience the comfort of a classic diner burger in this easy-to-make, family-friendly meatloaf. Made with lean ground beef, savory cheddar cheese, and a tangy ketchup-mustard glaze, this oven-baked dish offers all the iconic flavors of a grilled burger without the hassle. Perfectly balanced and moist, it’s the ultimate dinner solution for a hungry crowd, delivering a delicious, mess-free experience that slices beautifully every time.

Ingredients

Scale

2 lbs Ground Beef (85/15)
1.5 cups Cheddar Cheese, shredded
1 cup Panko breadcrumbs
1 medium Onion, finely diced
2 large Eggs
0.5 cup Ketchup
2 tbsp Yellow Mustard

Instructions

Preheat your oven to 375 degrees Fahrenheit.
Sauté the finely diced onions in a pan until translucent.
Line a baking sheet or loaf pan with parchment paper.
In a large bowl, combine the ground beef, breadcrumbs, eggs, half the cheese, and sautéed onions.
Mix gently until just combined.
Shape the mixture into a rounded loaf on the prepared pan.
Whisk together the ketchup and mustard.
Brush half of the glaze mixture over the loaf.
Bake for 50 minutes.
Remove from the oven, brush with the remaining glaze, and sprinkle the remaining cheese on top.
Return to the oven for an additional 10 minutes or until fully cooked and cheese is melted.
Let the loaf rest for 10 minutes before slicing.

Notes

Ensure you sauté the onions before mixing to prevent a raw onion texture. Resting the meatloaf is crucial to allow the juices to redistribute and ensure the loaf keeps its structure when sliced. Use high-quality Panko for the best texture.
