Ingredients
2 1/4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
3/4 cup unsalted butter, melted and slightly cooled
1/4 cup dark molasses
1 cup granulated sugar (plus extra for rolling)
1 large egg
Instructions
Whisk the flour, baking soda, ginger, cinnamon, and cloves in a medium bowl until thoroughly combined.
Combine the melted butter, sugar, and molasses in a large mixing bowl until the mixture looks glossy.
Add the egg to the wet mixture and beat until the texture becomes uniform.
Fold the dry ingredients into the wet mixture until just combined.
Form the dough into balls and roll them in extra granulated sugar.
Place on a baking sheet and bake at 350°F for approximately 10 minutes.
Notes
Ensure you spoon and level your flour to avoid over-measuring and dry cookies.
Do not use blackstrap molasses as it is too bitter; standard dark molasses is ideal.
These cookies store beautifully for up to three days while maintaining their chewy texture.
