Ingredients
12 lasagna noodle sheets

2 cups shredded mozzarella cheese
0.5 cup finely grated parmesan cheese
1 cup fresh spinach, chopped
1 tablespoon Italian seasoning
Instructions
Preheat your oven to 375°F.
Boil lasagna noodles in salted water until al dente, drain, and lay flat on parchment paper.
In a medium bowl, combine ricotta cheese, shredded chicken, chopped spinach, half of the mozzarella, and Italian seasoning.
Spread a thin layer of alfredo sauce on the bottom of a baking dish.
Spoon the cheese and chicken mixture onto each noodle, roll tightly, and place seam-side down in the baking dish.
Top the rolls with the remaining alfredo sauce, the rest of the mozzarella, and the parmesan cheese.
Bake for 30 minutes until the cheese is bubbly and lightly browned.
Notes
Use a rotisserie chicken to save prep time. Ensure noodles are laid flat to prevent them from sticking to each other. Store leftovers in an airtight container for up to 3 days.
