- 1/2 cup (115 g) unsalted butter
- 1 cup (125 g) all-purpose flour
- 4 large eggs (room temperature)
- 1 cup (100 g) grated Gruyère cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
Instructions
- Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a saucepan, bring water, butter, and salt to a boil.
- Add flour all at once and stir quickly until dough forms and pulls away from the pan.
- Cook for 1 minute to dry the dough slightly, then remove from heat.
- Let dough cool for a few minutes.
- Add eggs one at a time, mixing well after each addition until smooth.
- Stir in grated Gruyère, pepper, and nutmeg.
- Spoon or pipe small mounds onto baking sheet.
- Bake for 20–25 minutes until puffed and golden brown.
