Ingredients

Scale

1 can (15oz) chickpeas, drained and rinsed
1/3 cup high-quality tahini
3 tbsp fresh lemon juice
1 clove garlic, minced
2 tbsp extra virgin olive oil
1/2 tsp sea salt
2 tbsp cold water


Instructions

Place the tahini and fresh lemon juice into a food processor and blend for one minute until the mixture becomes pale and creamy.
Add the minced garlic, salt, and extra virgin olive oil to the processor and blend for an additional 30 seconds.
Add the drained chickpeas to the mixture and process for one minute, stopping to scrape down the sides of the bowl as needed.
While the motor is running, slowly stream in the cold water to achieve a light, fluffy consistency.
Taste and adjust seasoning with additional lemon juice or salt if desired.

Notes

For an even smoother, ultra-creamy consistency, remove the skins from the chickpeas before adding them to the food processor. Store leftovers in an airtight container in the refrigerator for up to 5 days.
