Description

Classic Lasagna Soup offers all the comforting, bold flavors of traditional baked lasagna in a streamlined, one-pot format. This hearty meal features seasoned lean ground beef, tender broken lasagna noodles, and a rich, aromatic tomato broth. Topped with creamy dollops of ricotta and gooey melted mozzarella, it is the perfect quick-fix dinner for busy weeknights that provides maximum flavor with minimal cleanup. Guaranteed to satisfy the whole family with its savory profile and velvety texture.

Ingredients

Scale

1 lb lean ground beef (90/10)
1 medium yellow onion, finely diced
4 cloves garlic, minced
6 cups beef broth (low-sodium)
28 oz crushed tomatoes
8 oz lasagna noodles, broken into 2-inch pieces
1 tbsp Italian seasoning
1/2 cup whole milk ricotta cheese
1 cup freshly shredded mozzarella cheese
Salt and pepper to taste

Instructions

Brown the ground beef in a large pot over medium-high heat until fully cooked.
Drain the excess fat from the pot.
Add the diced onions and sauté until soft and translucent.
Stir in the minced garlic and cook for one minute until fragrant.
Pour in the crushed tomatoes and beef broth, stirring to combine.
Add the Italian seasoning, salt, and pepper.
Bring the mixture to a gentle boil, then reduce heat to low.
Add the broken lasagna noodles to the pot and simmer for 10-12 minutes until pasta is tender.
Ladle the soup into bowls and top each serving with a dollop of ricotta and a sprinkle of shredded mozzarella.

Notes

Use gluten-free lasagna noodles if required. For a vegetarian version, substitute ground beef with plant-based crumbles and use vegetable broth. Store leftovers in an airtight container for up to 3 days; add a splash of broth when reheating as noodles will absorb liquid.
