Description
This timeless American comfort dish features high-quality ground beef mixed with aromatic sautéed vegetables, breadcrumbs, and a savory glaze. It results in a perfectly moist loaf with a rich, caramelized exterior. Designed for home cooking excellence, this meatloaf slices cleanly and offers a deep flavor profile, making it the ultimate centerpiece for a cozy, satisfying family meal.
Ingredients
2 lbs ground beef (85/15 ratio)
1 cup breadcrumbs
1 large yellow onion, finely diced
3 garlic cloves, minced
2 large eggs, beaten
1 cup tomato ketchup, divided
2 tbsp Worcestershire sauce (anchovy-free)
1/4 cup fresh parsley, finely chopped
Instructions
Preheat your oven to 375 degrees Fahrenheit.
Sauté the diced onions and minced garlic in a pan until translucent.
In a large bowl, combine ground beef, breadcrumbs, eggs, half of the ketchup, Worcestershire sauce, parsley, and the sautéed aromatics.
Mix the ingredients gently until just combined, being careful not to overwork the meat.
Shape the mixture into a loaf on a rimmed baking sheet or in a loaf pan.
Spread the remaining half of the ketchup over the top of the loaf.
Bake for 60 minutes or until an internal thermometer reads 160 degrees Fahrenheit.
Rest the meatloaf for 10 minutes before slicing to ensure the juices redistribute.
Notes
Do not overmix the meat to ensure a tender texture. Resting the loaf is crucial to prevent crumbling when slicing. If using a loaf pan, ensure it is not too deep to allow the exterior to properly caramelize.
