- 1 cup boiling water
- 1 cup fresh parsley, finely chopped
- 1/2 cup fresh mint, finely chopped
- 1 cup cherry tomatoes, diced
- 1/2 small red onion, finely chopped

- 2 tablespoons fresh lemon juice
- Salt to taste
- Black pepper to taste
Instructions
- Place couscous in a bowl and pour boiling water over it.
- Cover and let sit for 5 minutes.
- Fluff with a fork and let cool completely.
- Add chopped parsley, mint, tomatoes, and red onion.
- Drizzle olive oil and lemon juice.
- Season with salt and pepper.
- Mix gently until combined.
