Description

This Couscous Tabbouleh is a fresh, vibrant, and zesty salad packed with parsley, mint, juicy tomatoes, and fluffy couscous. Tossed with olive oil and lemon juice, it’s the perfect light dish for any occasion.


Ingredients

  • 1 cup couscous
  • 1 cup boiling water
  • 1 cup fresh parsley, finely chopped
  • 1/2 cup fresh mint, finely chopped
  • 1 cup cherry tomatoes, diced
  • 1/2 small red onion, finely chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Place couscous in a bowl and pour boiling water over it.
  2. Cover and let sit for 5 minutes.
  3. Fluff with a fork and let cool completely.
  4. Add chopped parsley, mint, tomatoes, and red onion.
  5. Drizzle olive oil and lemon juice.
  6. Season with salt and pepper.
  7. Mix gently until combined.
  8. Let rest for 10 minutes before serving.

Notes

Use the freshest herbs possible for the best flavor. Adjust lemon juice to your taste. Store in the fridge for up to 3 days. Add a splash of olive oil if it dries out.
