Ingredients
1 cup pure pumpkin puree
8 oz cream cheese, softened to room temperature
2 cups all-purpose flour
1.5 cups granulated sugar
1/2 cup vegetable oil
2 large eggs, room temperature
2 tsp pumpkin spice
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
Instructions
Preheat your oven to 350°F (175°C) and grease a standard loaf pan thoroughly.
Whisk the flour, baking powder, baking soda, salt, and pumpkin spice in a medium mixing bowl.
Combine the pumpkin puree, oil, sugar, and eggs in a separate large bowl until smooth.
Fold the dry ingredients into the wet ingredients until just combined.
In a small bowl, beat the softened cream cheese with a tablespoon of sugar until smooth.
Pour half of the pumpkin batter into the prepared loaf pan.
Drop spoonfuls of the cream cheese mixture over the batter and gently swirl with a knife.
Top with the remaining pumpkin batter and bake for 65 minutes or until a toothpick comes out clean.
Allow to cool completely in the pan before slicing.
