Description

Indulge in a restaurant-quality Creamy Chicken Alfredo right at home. This Italian-inspired dish features succulent, pan-seared chicken strips tossed with perfectly al dente fettuccine in a velvety, garlic-infused parmesan cream sauce. By focusing on temperature control and using freshly grated cheese, this recipe achieves a luxurious, smooth consistency without the need for flour-based thickeners, making it a reliable and sophisticated choice for any busy weeknight dinner.

Ingredients

Scale

1.5 lbs Chicken Breast, sliced into strips
12 oz Fettuccine Pasta
2 cups Heavy Cream
1.5 cups Parmesan Cheese, freshly grated
4 cloves Garlic, minced
3 tbsp Unsalted European style Butter
1 tsp Italian Seasoning
Salt and black pepper to taste

Instructions

Bring a large pot of salted water to a boil and cook fettuccine until al dente, reserving one cup of pasta water before draining.
Season chicken strips with salt, pepper, and Italian seasoning.
Heat 1 tablespoon of butter in a skillet over medium-high heat and sear chicken until golden and cooked through; remove from pan.
Melt the remaining 2 tablespoons of butter in the same skillet and sauté minced garlic for 30 seconds.
Pour in heavy cream and bring to a gentle simmer over low flame.
Gradually stir in the freshly grated parmesan cheese until the sauce is smooth and thickened.
Add the cooked chicken and pasta to the sauce, coating evenly and adding reserved pasta water if the sauce is too thick.

Notes

Ensure chicken is sliced into even strips for uniform cooking. Always grate your own parmesan cheese to avoid the anti-caking agents in pre-shredded bags which prevent a smooth emulsion. Keep the heat low while adding cheese to avoid curdling or separating the sauce.
