Ingredients
1 lb boneless skinless chicken breast, cubed
12 oz penne or fettuccine pasta
1.5 cups heavy cream
1 cup freshly grated parmesan cheese
4 cloves garlic, minced
2 tbsp extra virgin olive oil
2 tbsp unsalted butter
1 tbsp dried parsley
Instructions
Bring a large pot of salted water to a boil and cook the pasta until al dente.
Heat the olive oil in a large skillet over medium-high heat until shimmering.
Add the cubed chicken to the skillet and cook until golden brown and cooked through; remove and set aside.
In the same skillet, melt the butter over medium heat and sauté the garlic until fragrant.
Slowly pour in the heavy cream, stirring to incorporate the browned bits from the chicken.
Stir in the parmesan cheese until the sauce is smooth and thickened.
Return the cooked chicken to the skillet and toss to combine with the sauce.
Add the cooked pasta to the skillet, tossing well to coat evenly.
Serve warm, garnished with dried parsley.
Notes
Ensure heavy cream is at room temperature before adding to the pan to prevent the sauce from breaking. Use freshly grated parmesan rather than pre-shredded for a smoother, better-melting sauce. You can add steamed broccoli or spinach for extra color and nutrition.
