14.5 oz can diced fire-roasted tomatoes
3 cups low-sodium beef broth
4 oz cream cheese, softened to room temperature
1 cup shredded cheddar cheese, for topping
Instructions
Heat a large heavy-bottomed pot over medium-high heat.
Add ground beef and diced onion to the pot and cook until the beef is browned and no pink remains.
Drain excess fat from the pot.
Stir in the taco seasoning until the meat is evenly coated.
Pour in the beef broth and the diced tomatoes with their juices.
Add the black beans and corn to the pot and stir to combine.
Reduce heat to low and simmer for fifteen minutes to allow flavors to meld.
Stir in the softened cream cheese until fully melted and incorporated into the broth.
Serve hot, garnished with shredded cheddar cheese.
Notes
Ensure the cream cheese is at room temperature before adding to prevent clumping. You can garnish with fresh cilantro or avocado for added freshness. Store leftovers in an airtight container in the refrigerator for up to 3 days.
